Produksi Gula Merah Perspektif Ekonomi Islam Studi Kasus Petani Di kelurahan Sungai Salak Kecamatan Tempuling Kabupaten Indragiri Hilir Riau

Abstract

This study examines traditional coconut palm sugar production in Sungai Salak Village, Tempuling District, Indragiri Hilir Regency, through the perspective of Islamic economics. It focuses on the production stages and the implementation of honesty, halal-thayyib quality, trustworthiness, business blessing, and resource efficiency. A descriptive qualitative case-study design was employed. Primary data were collected through observation and in-depth interviews with ten palm sugar producers selected purposively, while secondary data were obtained from relevant literature and local documents. The data were reduced, categorized, compared with Islamic production principles, and interpreted thematically. The findings show that production consists of tapping coconut sap, filtering, cooking, optional addition of white sugar, molding, cooling, packaging, and distribution. The raw material is intrinsically halal and the activity supports household livelihoods, yet its sharia compliance is incomplete. Critical problems include inconsistent hygiene and the undisclosed addition of white sugar by some producers. The additive itself is not necessarily prohibited, but concealment of composition may constitute tadlis and weaken consumer consent. This study proposes a process-based sharia production framework emphasizing transparent composition, clean production, simple traceability, efficient fuel use, and collective quality standards.
